Ingredients
4 White Cod Fish Fillets (Fresh fish fillets are best, but thawed frozen fish works well too. Ensure they’re patted dry with a paper towel.)
1 cup Panko Breadcrumbs (For that irresistible crispy exterior)
1/4 cup Almond Flour (A great low-carb alternative to traditional flour, adding a subtle nutty flavor)
1 tsp Garlic Powder (Adds a savory depth to the breadcrumb mixture)
1 tsp Onion Powder (Complements the garlic with its mild, slightly sweet taste)
1/2 tsp Old Bay Seasoning (For a hint of spice and depth)
Salt and Black Pepper (To taste, enhancing the natural flavors of the fish)
2 Eggs (Beaten, to help the breadcrumb mixture adhere to the fish fillets)
2 tbsp Olive Oil (Helps in achieving a golden brown finish while keeping the fish moist)
Lemon Wedges (For serving, adding a fresh, citrusy brightness to each bite)
Instructions
Prepare the Coating
- In one shallow bowl, beat the eggs. In another, mix together the panko breadcrumbs, almond flour, garlic powder, onion powder, Old Bay seasoning, salt, and black pepper.
Coat the Fish
- Dip each cod fillet first in the beaten egg, allowing the excess to drip off. Then, dredge in the breadcrumb mixture, pressing gently to coat well.
Preheat the Air Fryer
- Preheat your air fryer to 400°F (200°C). This step ensures the fish starts cooking in hot air immediately, contributing to the crispy finish.
Arrange the Fish
- Lightly spray the air fryer basket with non-stick spray or line with parchment paper. Place the coated fish fillets in the basket in a single layer, ensuring they’re not touching for optimal air circulation.
Cooking
- Air fry the cod fillets for 10-12 minutes, or until golden brown and the internal temperature reaches 145°F (63°C). It’s a good idea to flip the fillets halfway through the cook time for even crispiness.
Serving
- Serve the crispy air fryer cod immediately with lemon wedges on the side for a fresh squeeze of lemon juice over the fish. Tartar sauce and a side of air fryer french fries can complete this meal, making it a satisfying, easy-to-prepare dish.
