1/4 cup Olive Oil (for frying)
Fresh Basil (for garnish)
Instructions
Preparation
- Preheat your oven to 375°F (190°C) and lightly grease your baking dish.
- Set up your breading station with the three shallow bowls: one with flour seasoned with salt and pepper, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan cheese.
Breading the Chicken
- Dredge each chicken breast in the flour, shaking off any excess.
- Dip the floured chicken into the beaten eggs, ensuring it’s fully coated.
- Press the chicken into the breadcrumb-Parmesan mixture, making sure it’s evenly coated on all sides.
Frying the Chicken
- Heat olive oil in the skillet over medium heat.
- Once hot, add the breaded chicken breasts and fry until golden brown on both sides, about 3-4 minutes per side.
Assembling the Dish
- Spread a thin layer of marinara sauce on the bottom of the prepared baking dish.
- Place the fried chicken breasts on top of the sauce.
- Spoon additional marinara sauce over each chicken breast, then top with shredded mozzarella cheese.
- Bake in the preheated oven until the cheese is bubbly and golden, about 20-25 minutes.
