Crispy Chicken Parmesan with Breadcrumb Coating

Ingredients

2 Chicken Breasts (boneless and skinless, pounded to even thickness)

1 cup All-Purpose Flour (for dredging)

2 Large Eggs (beaten)

1 cup Breadcrumbs (preferably Italian-style)

1/2 cup Parmesan Cheese (grated)

1 cup Mozzarella Cheese (shredded)

2 cups Marinara Sauce (homemade or store-bought)

Salt and Black Pepper (to taste)

1/4 cup Olive Oil (for frying)

Fresh Basil (for garnish)


Instructions

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease your baking dish.
  2. Set up your breading station with the three shallow bowls: one with flour seasoned with salt and pepper, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan cheese.
Breading the Chicken
  1. Dredge each chicken breast in the flour, shaking off any excess.
  2. Dip the floured chicken into the beaten eggs, ensuring it’s fully coated.
  3. Press the chicken into the breadcrumb-Parmesan mixture, making sure it’s evenly coated on all sides.
Frying the Chicken
  1. Heat olive oil in the skillet over medium heat.
  2. Once hot, add the breaded chicken breasts and fry until golden brown on both sides, about 3-4 minutes per side.
Assembling the Dish
  1. Spread a thin layer of marinara sauce on the bottom of the prepared baking dish.
  2. Place the fried chicken breasts on top of the sauce.
  3. Spoon additional marinara sauce over each chicken breast, then top with shredded mozzarella cheese.
  4. Bake in the preheated oven until the cheese is bubbly and golden, about 20-25 minutes.
Garnishing and Serving
  1. Garnish the baked Chicken Parmesan with fresh basil leaves.
