Instructions
Prep and Preheat
- Preheat your oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper or lightly grease it with non-stick spray.
Mash Bananas
- In a large mixing bowl, mash the ripe bananas using a fork or potato masher until smooth.
Mix Wet Ingredients
- To the mashed bananas, add the melted coconut oil, brown sugar, almond milk, and vanilla extract. Stir well to combine.
Combine Dry Ingredients
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
Combine Wet and Dry Mixtures
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing to ensure a tender texture.
Fold in Add-Ins
- Gently fold in the chopped almonds and vegan chocolate chips into the batter until evenly distributed.
Bake
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Cool
