Homemade Vegan Banana Bread

  • Total Time: 1 hour 15 minutes
  • Yield: 8-10 1x

Ingredients

Scale

3 Ripe Bananas (Mashed, for sweetness and moisture)

1/3 cup Coconut Oil (Melted, for richness)

2/3 cup Brown Sugar (For depth of flavor)

1/4 cup Almond Milk (Or any plant-based milk, for moisture)

1 tsp Vanilla Extract (For aroma)

2 cups All-Purpose Flour (Can substitute with whole wheat or gluten-free flour for dietary needs)

1 tsp Baking Soda (For rise)

1/2 tsp Salt (To balance sweetness)

1/2 cup Almonds (Chopped, for crunch)

1/2 cup Vegan Chocolate Chips (For chocolatey bites)

Instructions

Prep and Preheat
  1. Preheat your oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper or lightly grease it with non-stick spray.
Mash Bananas
  1. In a large mixing bowl, mash the ripe bananas using a fork or potato masher until smooth.
Mix Wet Ingredients
  1. To the mashed bananas, add the melted coconut oil, brown sugar, almond milk, and vanilla extract. Stir well to combine.
Combine Dry Ingredients
  1. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
Combine Wet and Dry Mixtures
  1. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing to ensure a tender texture.
Fold in Add-Ins
  1. Gently fold in the chopped almonds and vegan chocolate chips into the batter until evenly distributed.
Bake
  1. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  2. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Cool
  1. Allow the banana bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
