Ingredients
2 lbs of Whole Carrots (peeled and trimmed; typically equates to about 8-10 medium-sized carrots, depending on their size and thickness)
3 tbsp of Honey
2 tbsp of Olive Oil
1/2 tsp of Salt
1/4 tsp of Black Pepper (freshly ground)
2 tbsp of Fresh Parsley (chopped, for garnish)
Optional: 1 tsp of Garlic Powder (added flavor)
Instructions
Preparation of Carrots
- Preheat your oven to 400°F (200°C). Line the baking sheet with parchment paper for easy cleanup.
- Peel the carrots using the vegetable peeler and trim the ends. If the carrots are particularly large, you can slice them in half lengthwise.
Seasoning
- In the mixing bowl, combine the whole carrots with olive oil, honey, salt, and black pepper. Toss until the carrots are well-coated with the mixture. For an extra kick, sprinkle garlic powder over the carrots and toss again.
Roasting
- Arrange the carrots in a single layer on the prepared baking sheet. Ensure they are not overcrowded to allow for even roasting.
- Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and caramelized, turning them halfway through the cooking time.
Garnishing
- Once done, transfer the roasted carrots to a serving platter. Drizzle any remaining glaze from the baking sheet over the carrots.
- Garnish with freshly chopped parsley before serving to add a pop of color and freshness.
